Depending on how big the site is you will probably find yourself using both, however it really depends.

 

A few weeks ago I wireframed a site that is looking to sell 1000's of stationary items (pens, pencils ect). I found the best format to be a single page list view, with some categories and very smart searching. I showed it to them the other day, you can literally add 100's of items to your basket in minutes and browse without leaving the page. It's perfect for their clients, who regularly order 200+ products at a time and really don't want the hassle of going in and out of pages to find stuff. We listened to their frustration with the current system and delivered something much more intuitive.

 

Basically, you need to work out the best format yourself as there's no one stop solution.
