What Analytics data would you use to see how many single page visitors you get to your website?

Not sure what you mean. I’d just use my preferred analytics application.

I'm referring to what metric you look at within your analytics application. Do you setup a custom report or do you use something pre-defined to measure single page visitors?

For example, if I look at Google Analytics I can't see obvious that would provide me with that information.

I think the key thing here is measuring specific actions such as clicking a CTA, sending an enquiry via a contact form or completing a task. I don't use GA but in Matomo you can record things like clicks and actions which can give you an insight into what visitors are actually doing.
