I had similar debates when I put together my portfolio which includes some reels / video walkthrough's. I wanted an elegant embedding solution that would be professional and fit well within my site framework visually as well as work across all devices (iOS particularly).
 
Both Youtube and Vimeo do it well. I decided in the end to go with Vimeo (with plus membership). Firstly, the quality was slightly better on Vimeo for many of the tests I did. I tried different compression settings in MeGui for various video gaming and snowboarding videos and Vimeo came out slightly better. I put this down to Vimeo plus's 2 pass encoding they do rather than youtube's 1 pass.
 
Also, Having a plus account lets you fully customize the embed's visual style and the elements that the user can see, as well as forcing 'HD' for desktop users if you feel the video deserves it. You can also remove the Vimeo logo and change the colours of the controls to make it feel part of your site. Example: http://www.webdale.co.uk/work/portfolio-2012/
 
In the end it felt like Vimeo's focus is on video professionals and creatives rather than the more social and 'for the masses' Youtube. If you're after more organic views and more comments / social interaction then perhaps youtube is the right way - but the kind of people you'll get looking and commenting will most likely be very different to those on Vimeo.
 
Your video embeds will display fine on all devices, the iframe deals with all that.

I'm of the belief that if it's just you... you should always use 'I'. Being honest and transparent in today's world is refreshing, and you can see a trend in the small and medium business community towards that progressive style of doing things.
 
You might lose some huge corporate clients, but they are usually a huge pain in the ass to work with anyways due to all the hoops you need to jump through to get anything done, so maybe that's not a bad thing?
 
It's perfectly fine to use 'We' when there are actually two of you.
 
One notable exception: I see absolutely no problem in using 'We' if you have honest intention to add people to your team through partnership or employment or whatever, it's less hassle than having to switch pronouns on all of your marketing collateral when you grow.

Something like that anyway (i'm doing it blind), you need to float them within a container.

Plug your primary in and see what comes up with the different methods. I tend to use a complimentary (opposite colour) then apply a tertiary, contrasting colour for things I want to highlight or accent (icons etc).

Re-location is probably your best option. I used to live in Devon 4 years ago and had the same issues. If you were to move to Birmingham, Bristol or London you would probably have a much wider choice of Junior/Mid roles either in Agencies with decent clients or large corporates with in-house production teams.
 
If you have a keen interest in UX/AI you'd probably want to find a large corporate as they tend to do significantly larger projects with in a team based environment (scrums etc). You'd learn a hell of a lot about presenting work, the way big projects go down and the importance of UX/IA well before making things look pretty in Photoshop. Even as a Junior you'll get stuck in, though you may start off working on smaller assets and non key pages, but they all have to go through the same process (if it's done properly). You'll be wanting to look for E-commerce companies, Gaming (gambling), Banks (though many require banking experience), Telecomms and ISP's, Software developers etc.
 
Sometimes you just have to go where the work is, if you feel there's no opportunity where you are then don't sit still for too long
