Bounce rate is the % of 1 hit wonders who visit your site and leave straight away. What a lot of search engines use this information for is to determine if the keyword used to visit your site is accurate, the higher the bounce rate of a particular search term shows the search engine that your site is less relevant than a similar site with a lower bounce rate. I think they just add this to their ranking algorithm pot and give it a stir.
