Backup Server Script doesn't work

Hi, I have a PHP script that should backup my entire server. I have CronJobs running the script every night, the script doesn't create a backup of my entire server. I've tried and tried and tried to find a solution as to why the script doesn't work, all without any success.

Below is the script, I filled in all the details that need to be filled in for the copy that is running on my server.
