My clients main website url is a .com and we've just moved it from one hosting provider to another and totally redesigned his site - it's now much simpler has only a few pages whereas the original had tons - I've implemented a htaccess file with 301 redirects for all the pages from the old site to the new, but not sure what to do about his .org .co.uk and .eu domains - how do I redirect from these?

According to me, Yes it can be possible through 301 redirection weather it is .org or .edu . I am not agree with point of Renaissance-Design So Please explain what would be problem if we redirect from .edu to .com or .co.uk .

Simple: .com and the regional equivalents denote a commercial site. .org and the regional equivalents denote a non-profit site. There's no valid circumstance where redirecting one to the other would be kosher.
