I'm just in the midst of putting together a small website which I hope to test online in the new year so I've been looking at web hosting.

Why do some searches produce a wealth of inforamtion for the same person/company, such as the attached examples for the V&A, London or Timothy Web Design, whilst others only produce a short entry?

Those are "sitelinks" - if your site is established, important and easy for Google to navigate, Google will generate those on searches it assesses as being specifically for your site.
