I find opencart the easiest to use.

try them?

download wamp - install them all and invest a couple of hours in playing with them all.

all will have their pluses and negatives

yes

it allows you to run php/mysql on a local host - you can play around with anything and build themes without worrying about anything and stuff. Its quicker too.

osCommerce is best shopping cart for single store and Magento is best for multiple store.

I'd have to agree, Prestashop is really easy to use and has loads of great modules, although some can be expensive. They seem to update the program lots as well.
