So, I was wondering if you guys knew any eCommerce CMS websites that are almost 100% customizable

Basically, I want to design the site, but I don't want to deal with all the coding and have to learn of that. But, at the same time I don't want to use templates or stick to certain boundaries that many have.

Try OpenCart, you can style it however you want using HTML/CSS and then plug the bits of the cart in afterwards.

There are many free open source eCommerce content management systems which could be easily customized. Few of them are osCommerce, CubeCart, Opencart and Zen Cart. These are widely used eCommerce shopping carts and fully customizable.
