I started backlink building of my site 5 days ago and today my site is on rank 65 on google search results for the two keywords that I do optimization. It is a highly targeted niche.
When google can penalize my site? When I start to build too many backlinks or when I start to build them to fast? Do I need to stop for some days and after that to start building again?
And is it worth to put backlinks on sites that is not relevant to mine?

Google looks for something called a link profile of your website.
You should be aiming at a so called natural link profile where links are built gradually over time. An unatural link profile would consist of lots of links over a short period of time. As with anything realted to Google, specific numbers are not made available. It is meant to stop link farms and directory spam.
Again, just worry about writing useful content people will want to link to.

Yer (and I'm sure this open to debate) but I've found it's not the anchor text that the issue, it's the timeframe in which you get these links that is the major killer.

Its very good sound if your website is ranking on 6-7 page for your targeted two keywords in just a four days. You don't need to stop promoting your website if you are not spamming or black hat trick. Otherwise you can do each and every possible efforts to increase your visibility in search engines with 100% relevancy in your Search Engine Optimization.
