I had to post this as so many people offered me help.

I have trawled through so many sites looking for just a simple explanation as to what to do and I finally found it.

All I needed to do was add an account in the sendmail.ini folder and set it as default, and then uncomment the section in the php.ini file to use the sendmail option.... And hey presto - it's all working.

So hopefully this may help someone else in the future who almost lost the will to live trying to get the damn thing working.
