What's the best way of testing different browsers in your opinion?
I just have a windows desktop for all the IE and Mozilla etc and then a mac for safari.

I have a windows based laptop and I have downloaded all the browsers onto that. Just opening the files within the browser shows if it works or not etc. I also use work and home PC's to check the sizing is right for the pages etc.

IEtester is pretty good for just IE.
My thinking is to design for the latest browsers then fix any bugs that may appear in older versions, which IE 6 and 7 are very likely to have. To this end I usually test a page in the most recent version of FF, IE and Safari installed on my pc, then Use IEtester for IE 6 and 7. Chrome and Opera usually behave themselves and have a limited market share so unless the site looks real bad I don't waste time with them (I have them installed as well).
When you start trying to get symmetry across every version of every browser you're asking for hours of headache.

It's easy if you are using Windows.
Personally I find "IE collection" much more reliable than multiple IE. You can easily install multiple FF and Opera versions, Safari is a little bit more tricky, but still possible. That is, if you want to test manually. If you want to automate this - try BrowserSeal

For quickly checking small rendering changes on older versions of IE, netrenderer is handy.
I find the portable versions of IE hosted by spoon.net useful for more in depth testing.

Deffo has to be adobe browser labs.
or you can use this other site, but it takes a while to load all of the screen shots. The better thing is it has a lot more choice on different operating systems. it's called http://browsershots.org/
